We all know that 1st October was celebrated all over the world as the International 'Coffee Day'. Many people may also know that it was first cultivated in Ethiopia.Then it spreads to different countries of the world through Europe. With it, experiments are done in different countries, as a result of coffee is cultivated in different countries in different tastes and smells. As a result, its price is also different. I will discuss some of the methods of coffee production that will make your sense quite bitter.

First of all, let's talk about the most valuable coffee. Coffee Luak is cultivated in Indonesia. Coffee is prepared here in a strange way. First the sweet coffee beans are fed to a special species of civet cat. Then it is mixed with the digestive juice secreted from its intestine.Later when it comes out of the stool it is cleaned and sold.Is it not shocking to know? But you will be even more surprised to know that it is currently the most valuable coffee. The price per kg is 1,00,000 rupees in Indian price.

The next most expensive coffee in the region is black ivory coffee, which is grown in Thailand and in the same process as in Indonesia, where elephants are used instead of civet cat.In the same process, the elephant is fed it and the coffee is cleaned from its stool. The price per kg is 90,000 Indian rupees.

Then there is the Finca El Enherto coffee, which is washed in a special process and adds to the aroma. It costs about Rs 60,000 per kilogram in Indian currency.

Then we can talk about Esmaralda Geisa coffee which is cultivated only in the north of Panama. It is also quite expensive. Rs 22,000 per kg in Indian currency.

Did you know that the famous historical character hero Napoleon liked which coffee. St. Helena is a small island near the Atlantic Ocean. Napoleon was a fan of the coffee grown there.

However, the role of coffee cannot be underestimated only with its price. Especially nowadays, even if young generations go for dating, they prefer a coffee shop to spare time. Even nowadays, coffee is taking place as a center of creative activities.

কফি দিবস 

আমরা সকলেই জানি যে গত ১লা অক্টোবর সারা বিশ্বে আন্তর্জাতিক 'কফি দিবস' রূপে পালিত হলো।অনেকেই হয়তো এটাও জানি যে ইথিওপিয়ায় প্রথম এর চাষ শুরু হয়।তারপর তা ইউরোপ হয়ে পৃথিবীর বিভিন্ন দেশে ছড়িয়ে পরে।তার সঙ্গে চলে তা নিয়ে  বিভিন্ন দেশে পরীক্ষা যার ফলে এক এক দেশে একেকরকম কফি চাষ হয়ে থাকে  স্বাদ ও গন্ধে ভিন্ন ।তার ফলে তার দামও ভিন্ন হয়।আজ আমরা সেইসব বিষয়ে আলোচনা করবো।তার সঙ্গে আমরা কফি উৎপাদনের এমন কিছু পদ্ধতি আলোচনা করবো যা শুনলে আপনাদের চোখ কপালে উঠতে বাধ্য। সালতানামি 

প্রথমেই সবচেয়ে মূল্যবান কফি নিয়ে কথা বলি।কফি লুয়াক হলো ইন্দোনেশিয়া দেশে চাষ হয়।এখানে বিচিত্র উপায়ে কফি প্রস্তুত করা হয়ে থাকে।প্রথমে মিষ্টি দানার কফি দানা এক বিশেষ প্রজাতির ভামবিড়ালকে খাওয়ানো হয়ে থাকে।তারপর তা ভামবিড়ালের পাচন রসে মেশে।পরে যখন তা মলের মধ্যে দিয়ে বেরিয়ে আসে সেটি পরিষ্কার করে বিক্রী করা হয়।কি গা গুলিয়ে উঠলো তো?তবে আরও আশ্চর্য হবেন জেনে যে এটি বর্তমানে সবচেয়ে মূল্যবান কফি।কেজি প্রতি যার দাম ভারতীয় মূল্যে ১,০০,০০০ টাকা। 

এরপর যে অঞ্চলের কফি সবচেয়ে দামী তা হলো ব্ল্যাক আইভরি কফি যার চাষ হয় তাইল্যান্ডে এবং এখানেও ইন্দোনেশিয়ার মতন একই প্রক্রিয়ায় কফি প্রস্তুত করা হয়ে থাকে তবে এখানে ভামবিড়ালের পরিবর্তে হাতি ব্যবহার হয়ে থাকে।তারপর একই প্রক্রিয়ায় হাতিকে তা খাইয়ে তার বেরিয়ে আসা মল থেকে কফি পরিষ্কার করা হয়।প্রতি কেজি মূল্য ভারতীয় মূল্যে ৯০,০০০ টাকা।

এরপরে আসবে ফিনকা এল এনহেরতো নামক কফি যা এক বিশেষ প্রক্রিয়ায় ধোয়া হয়ে থাকেএবং এতে এর সুবাস খুব বাড়ে।প্রতি কিলোগ্রামে ভারতীয় মুদ্রায় এর দাম হয় প্রায় ৮০,০০০ টাকা।

তারপর আমরা এসমরালদা গেইসা কফির কথা বলতে পারি যা কেবলমাত্র পানামার উত্তরে চাষ হয়ে থাকে।এরও বেশ দাম।ভারতীয় মুদ্রায় কেজি প্রতি ২২,০০০ টাকা।

জানেন কি বিখ্যাত ঐতিহাসিক চরিত্র বীর নেপোলিয়ান কোন কফির কদর করতেন।অতলান্তিক মহাসাগরের ছোট্ট এক দ্বীপ সেন্ট হেলেনা।সেখানকার চাষ করা কফির ভক্ত ছিলেন এই বীর।এর কেজি প্রতি দাম ভারতীয় মূল্যে প্রায় ১১,০০০ টাকা।

তবে ঠিক মূল্যের পরিমান দিয়ে কফির ভূমিকা ছোট করা  যাবেনা।বিশেষ করে আজকাল কি ছেলেমেয়েরা ডেটিং করতে গেলেও কোনো কফিশকে প্রাধান্য দিয়ে থাকে।এমনকি আজকাল অনেক সময়ে কোনো ক্রিয়েটিভ কাজকর্মের কেন্দ্র হিসাবে জায়গা নিচ্ছে।এককথায় কফি শুধু আর পানীয়তে পরিচিতি নেই ,আজ সে একটা আবেগে পরিণত হয়েছে।
